Black Bean Soup

Ingredients

  • 2 16oz cans black beans - undrained
  • 1 cup reduced sodium chicken broth
  • 1 small onion - chopped
  • 1 teaspoon garlic - minced
  • 1 16oz jar salsa - thick and chuncky
  • 4 teaspoons lime juice
  • 2 teaspoons ground cumin
  • 1/4 teaspoon crushed red pepper (optional)
  • 1/3 cup plain yogurt (optional topping)
  • fresh cilantro leaves - chopped (optional topping)
  • nonstick cooking spray

Directions

  1. Place 1 can of beans with liquid and chicken broth in blender or food processor, cover, blend until smooth.
  2. Coat large saucepan with cooking spray, heat over medium – high heat.
  3. Add onion and garlic: cook for 4 to 5 minutes or until onion is tender.
  4. Add blended bean mixture, remaining beans and liquid, salsa, lime juice, cumin, and crushed red pepper.
  5. Bring to boil.
  6. Reduce heat to low and cover.
  7. Cook, stirring occasionally for 25 to 30 minutes.
  8. Serve topped with yogurt, garnish with cilantro.
