Grits, Greens and Sausage

Ingredients

  • 1 link (about 3oz) andouille sausage or other spicy cooked sausage - sliced
  • 2 medium chile peppers (mild or hot) or half a bell pepper - chopped
  • 4 ounces (about 4 cups) collard greens - chopped
  • 1/2 cup low-fat (1%) milk
  • 1/8 teaspoon salt
  • 1/2 cup quick-cooking grits
  • 1/2 tablespoon unsalted butter
  • 1/2 teaspoon olive oil
  • crushed red-pepper flakes to taste

Directions

  1. Bring a large pot of water to a boil.
  2. Thinly slice sausage and peppers.
  3. Cook greens in boiling water until tender, about 8 minutes.
  4. Meanwhile, in a small pot, combine milk, I cup water and salt over medium heat.
  5. When it starts to bubbles, slowly stir in grits.
  6. Reduce heat to low and cook, stirring often, until grits are tender, about 5 minutes.
  7. Remove from heat and stir in butter.
  8. Cover and set aside, Drain collard greens and set aside.
  9. Return empty pot to medium heat.
  10. Add oil, sausage and peppers; cook about 2 minutes.
  11. Add cooked greens and toss until heated through.
  12. Dish grits into serving bowls and top with greens and sausage mixture.
  13. Season to taste with red-pepper flakes.
