Ingredients
- 1 link (about 3oz) andouille sausage or other spicy cooked sausage - sliced
- 2 medium chile peppers (mild or hot) or half a bell pepper - chopped
- 4 ounces (about 4 cups) collard greens - chopped
- 1/2 cup low-fat (1%) milk
- 1/8 teaspoon salt
- 1/2 cup quick-cooking grits
- 1/2 tablespoon unsalted butter
- 1/2 teaspoon olive oil
- crushed red-pepper flakes to taste
Directions
- Bring a large pot of water to a boil.
- Thinly slice sausage and peppers.
- Cook greens in boiling water until tender, about 8 minutes.
- Meanwhile, in a small pot, combine milk, I cup water and salt over medium heat.
- When it starts to bubbles, slowly stir in grits.
- Reduce heat to low and cook, stirring often, until grits are tender, about 5 minutes.
- Remove from heat and stir in butter.
- Cover and set aside, Drain collard greens and set aside.
- Return empty pot to medium heat.
- Add oil, sausage and peppers; cook about 2 minutes.
- Add cooked greens and toss until heated through.
- Dish grits into serving bowls and top with greens and sausage mixture.
- Season to taste with red-pepper flakes.
